These brownies are very tasty, and they are especially suited for using in ice cream – the olive oil is softer than butter when frozen, which makes them a perfect mix in. Don’t hold this against them, but they are gluten-free, dairy-free, and since I use cocoa instead of chocolate, the fat content is far lower than in regular brownies.

With ingredients readily available in our shops, we could readily cook up Thai curried fish, saag paneer or saltimbocca for tonight’s dinner, but we don’t have the traditional knowledge and skills that would have come growing up with those dishes. It’s the transformation of cooking using inherited skills based upon a deep understanding of limited ingredients and a limited repertoire, to our current limitless cookery options.

While I hugely applaud thinking outside the box in terms of business models, you should know that the only seating is a bench outside, there wasn’t any interaction to speak of, and you feel a bit in the way since you’re in a clothing shop. All that care and attention means service is very slow – I think five separate people peeled off the queue in front of me while I was waiting – clearly their impatience overrode their desire for quality.

There was lots of that this afternoon, and I have to give full credit to the Gardai, who have clearly invested a lot in the Special Olympics, and their involvement was great to see. Today, as the Olympians arrived into town, surrounded by a phalanx of volunteers, the crowd wasn’t anyway as big as it should have been. We were there, handing out ice cream, along with maybe 30 other people.
