This is the paleta (shoulder ham) version of our Limited Edition Valle de los Pedroches shoulder ham. This is one of our top paletas, and a good way to sample the highest quality Iberian ham without spending a fortune.

Every year Hamlovers buys the entire production of Bellota hams from a small farm in the Valle de los Pedroches, Córdoba. Why? Because this is hands-down the best ham for its price that we have ever tasted. You hear a lot of talk about doing things the old-fashioned way, but this is the real thing: a stone barn, abundant land (about one hectare per pig), and a farmer who uses the same traditional methods his father taught him. These shoulder hams follow the D.O. guidelines: free-range, strict acorn diet, and 18 month curing time. About 50 of these shoulder hams come out of the curing house each year, and once they're gone, they're gone. We've kept a few for ourselves and close friends, so we've 40 for sale. We challenge anyone to find better shoulder ham at this price.
