Dairygold Food Ingredients (DFI) has installed the module at their specialist cheese production facility, Mogeely, Co. Cork. DFI is Ireland’s second largest milk producer and a supplier of top quality cheeses and dairy ingredients. Operating from 4 Irish-based processing facilities DFI produce a broad range of dairy ingredients with two facilities concentrating on cheese production and two others on dairy powders.
SoftTrace In-Process is a production management system designed specifically to meet the needs of those industries that require batch quality traceability from the raw material / ingredient intake stage through manufacturing to the finished product units. It acts as the control centre for all data associated with the manufacturing process, and provides instant access to detailed quality information on the make-up of any batch of bulk finished product to the packed finished product units. SoftTrace In-Process, process control records are typically custom-configured to reflect existing processes and records – such as raw material usage, batch control, ingredients usage, checklists and CIP.
At the Mogeely speciality cheese facility, DFI develop recipes for new cheese varieties which fuse together the artisan traditions of cheese-making with the advanced technical expertise. The Mogeely facility produces 10,000mt of premium speciality cheese, with three different production technologies and multiple formatting options providing optimum flexibility.
As part of an overall project to achieve demonstrable traceability and enhanced quality management, DFI has implemented the SoftTrace In-Process module to capture data from laboratory instruments and replace paper-based worksheets in areas throughout the manufacturing facility including milk intake, starter room, cheese vats, production, CIP, laboratory and packing areas.
At DFI SoftTrace In-Process captures data directly from the Lactoscope instrument and makes the data immediately available to production personnel in a graphical format. This facilitates making rapid process adjustments in order to minimise reprocessing or downgrading of cheese manufactured. SoftTrace In-Process production worksheets are used to record daily cheese starter information, vat production data and CIP data. The relevant worksheets are created by the system on a daily basis and manually updated on the production floor.
